Chocolate Cake

So, today I'm sharing a traditional recipe. The thing is this isn't a traditional recipe for Saint John's Party, but it is traditional for every Sunday afternoon at grandma's.
This is probably one of my favorite cakes, it's a chocolate cake and it has so much cocoa that it tastes amazing. It's also moist and soft and... I think I should stop describing it, otherwise you will stop reading.
So before sharing this recipe, I'll just explain a few things about this recipe.

First of all you add sugar, oil and egg yolks to a bowl and whisk it until it's well combined. Due to the vegetable oil, you will have a oily consistency. Seriously, in the beginning it will feel like there's something wrong, like there is too much oil in it. But don't worry, that's how it should be for now.
So you want to do that in order to combine the ingredients, break the egg yolks and to, at the same time, unfold the yolk protein and cover it with fat, so that you don't get the formation a protein network. You don't want the same consistency of a bread dough.
Then you add half the dry ingredients. The flour and cocoa powder will absorb most of the fat, at least that's what it will feel like. But you will end up with a oily and grainy consistency. Trust me it's still fine.
The next step will be to add half the hot water and that's what will bring the batter together. It look a lot more like a cake batter. After they are well combined you will add the other half of dry ingredients and the other half of water.
After combining them really well. You will beat the egg whites in another bowl, whisk them till soft peaks.
Then you incorporate gently the baking powder and soda bicarbonate. And finally the egg whites.
Why do you add all of the leavening agents in the end?
Because the hot water helps speeding up the reaction of the baking powder and soda bicarbonate. So in order to avoid that from happening until the cake is in the oven, you add them at the last minute.

Chocolate Cake

Ingredients:

    2 eggs
  • 360g caster sugar
  • 240mL vegetable oil
  • 360g flour
  • 100g cocoa powder
  • 10g baking powder
  • 5g soda bicarbonate
  • 450mL hot water

Glaze:

  • 200mL milk
  • 100g caster sugar
  • 100g cocoa powder
  • 60g butter

Method:

  1. Take a baking pan of 30cm diameter and butter it, then dust it with flour.
  2. Boil the water and pre-heat the oven at 200°C.
  3. Separate the egg yolks from the egg whites.
  4. In a bowl, add the sugar, vegetable oil and egg yolks, whisk them until well combined.
  5. Sieve the flour and cocoa powder together.
  6. Add half the flour and cocoa powder to the bowl. Mix it well until combined.
  7. Add half the hot water and whisk it again until you get a smooth consistency.
  8. Add the other half of flour and coca powder and the other half of water. Mix it until you get a homogeneous batter.
  9. Whisk the egg whites until you reach soft peaks.
  10. Incorporate the baking powder and soda bicarbonate to the batter.
  11. Then gently combine the egg whites to the batter.
  12. Put the batter in the baking pan and bake it for around 40 minutes.
  13. In a pan mix the milk, sugar, cocoa powder and butter and take to the heat until it boils for 3 minutes.
  14. Cover the cake with it.
